Last night, I had the opportunity to attend the “Nikki Can Cook” book launch party for her new book, “A Bit of This, A Bit of That: Comfort Food for the Eclectic Soul,” and the revealing of her all new spice collection.

Nicole Bell (“Nikki Can Cook”) is the star of the new culinary competition series, “America’s Best Cook,” on the Food Network.  America’s Best Cook is a new show on the cable channel that features remarkable home cooks in their kitchens.  The cooks are then thrown into a very intense competition to see who is the best home cook in America.  These cooks have no formal culinary training which makes for a very interesting plot.

Nikki Can Cook All Natural Spice Collection. 

The event was held at Sas Atl Sky Lounge, which was an elegant and intimate venue. Guests were treated to tasty honeysuckle lemonade cocktails compliments of CatEye Vodka.  The cocktails were delish to say the least.  The cocktails were made with freshly-squeezed lemonade and mixed vodka.  This drink is the perfect drink for spring.  Guests were also treated to saporous hors d’oeuvres prepared by Nikki Can Cook.  The featured delectable delights included Trinidadian macaroni and cheese, kale salad with smoky vinaigrette, curry fried chicken with Haitian mamba peanut sauce, and sweet southern cornbread.  All of the delights were extremely yummy. nikki1

My favorite of the evening, hands down, had to be the kale salad. The smokey vinaigrette was an excellent compliment to the fresh crisp kale. Nikki also performed a live cooking demo for those in attendance.  She prepared a tasty Calypso Jasmine Rice.  The rice was full of flavor and enjoyable, and I was quite disappointed that there wasn’t more.
